  • 3 sprigs tarragon
  • 4 raw lobster tails about 150 – 200g each
  • 400g linguine
  • 1 French shallot, brunoised
  • 2 cloves garlic, finely chopped
  • 180ml pouring cream
  • 80g cultured butter
  • 2 lemons, zest
  • 60ml lemon juice
  • Salt and pepper
  • 5g caviar to serve
  • Chives, finely chopped
