Summer on a plate! Showcase the season’s best fresh seafood and vegetables in a light crispy batter served with a zing of fresh lemon and a creamy saffron mayonnaise. A standout celebration dish with a glass of prosecco.

Ingredients

  • Pinch saffron
  • 2 egg yolks
  • 250ml grapeseed oil
  • 1 clove garlic, crushed
  • 1 tsp lemon juice
  • 6 zucchini flowers, stamens removed
  • 6 asparagus stems
  • 4 yellow squash, quartered or sliced into 4mm rounds
  • 2 globe artichokes, trimmed, cut into 4-6 wedges
  • 6 pencil leeks
  • 1 lemon, thinly sliced
  • 500g baby squid, cleaned sliced into fine rings-  legs can be fried whole
  • 300g green school prawns, peeled, tails on
  • Canola oil for frying
  • 300g plain flour
  • 150g cornflour
  • 2 tsp baking powder
  • 1 tsp ground sage
  • 1 tsp sea salt
  • 100ml cold 170276 Bottega Vino Dei Poeti Prosecco Doc
  • Ice cold soda water
  • Sea salt and lemon wedges to serve
